When you make coconut milk at home, you can adjust the amount of water to make a thick, creamy milk or a lighter, drinkable version. Making coconut milk at home is more cost-effective since using fresh coconut or shredded coconut is often cheaper than buying multiple cans of coconut milk. Best of all, homemade coconut milk contains only natural ingredients and is free of preservatives and additives.

  • Whole dry coconut: I am using a whole fresh coconut because it is widely available here in Jamaica, and is the traditional choice for this recipe. If you can’t find fresh coconut—or simply want to skip the work of cracking and preparing it—you can use unsweetened shredded coconut instead
  • Water: The amount of water you use will depend on how light or thick you want the coconut milk to be. I like my coconut milk rich, thick and creamy. The water-to-coconut ratio for a rich, thick and creamy milk is about 1 cup of coconut to 1 cup of water. For regular coconut milk, use 2 cups of water to 1 cup of coconut, and 3 cups of water for light coconut milk.

Though this is not a thing in Jamaica, you can add flavour variations using the following optional ingredients for desserts, porridge, cereal, etc.

  • Dates: To add a sweet taste if you wish to use coconut milk in tea, coffee or cereal.
  • Sea salt: For a touch of savoury flavour.
  • Spice: A touch of cinnamon or nutmeg to add a bit of kick.

How to make homemade coconut milk (step-by-step)

Learning how to make coconut milk at home is incredibly simple and takes only a few minutes. With just coconut and water, you can create a fresh, flavourful milk following the step-by-step instruction below.

How to make coconut milk at home easily
  1. Prepare the coconut: If you’re using shredded coconut, skip this step. Crack the shell with a hammer or another heavy object. If you want to save the coconut water, pierce one of the coconut’s eyes first and pour the water into a bowl. Then use a flat, dull knife to pry the coconut meat away from the shell.
  2. Add coconut to a blender: Give the coconut meat a quick rinse, then place it in a blender and add just enough water to cover it. If you’re not using a high-speed blender, you may have to chop the coconut meat into smaller pieces.
  3. Blend: Blend until the coconut is finely blended and the liquid looks creamy.
  4. Strain the coconut milk: Place a nut milk bag, cheesecloth, or fine mesh strainer over a bowl and pour the blended mixture through it. I prefer using a cheesecloth or a nut milk bag because fine mesh catches the coconut pulp and produces smoother coconut milk than a sieve. It also allows you to gather the coconut and squeeze out as much liquid as possible.
  5. Optional ingredients: If you’d like to include the optional ingredients, blend them with the coconut meat or add them to the coconut milk after straining and blend again

Make homemade coconut milk without a blender

You can make fresh coconut milk at home even without a blender—just use the zesting side of a kitchen box grater. This side has the coarsest teeth and produces very fine coconut shreds, which work perfectly for extracting rich coconut milk.

Grating coconut by hand does take some effort because the flesh is quite hard. Apply steady pressure as you grate, and keep your fingers safely away from the sharp metal to avoid scraping your knuckles.

Method
 

  1. Pierce the soft coconut eye with a skewer and drain out the water. Then use a hammer to smash the coconut open.

  3. Wash the coconut meat and add it to a blender with enough water to about cover the coconut, then blend until smooth. Depending on the size of your blander, you may have to do two batches.
