Ingredients

  • 1 lb Ginger See notes
  • 4 large Limes
  • 10 cups Water
  • 2 cups Brown sugar See notes
  • Carbonated water (optional) See notes

Instructions

  • Thoroughly wash the ginger, removing the dirt, then chop it into pieces your blender can handle. Puree the ginger in a blender with 2 cups of water.
  • Pour the mixture into a large container that can be covered. Add 8 cups of boiled water. (If you intend to use the carbonated water, only add 3 cups of boiling water.) Then leave it to steep for 2-4 hours. For the best result, steep overnight.
  • Strain using a fine strainer and a cheesecloth.
  • If you are using carbonated water, add 5 cups at this point. Then add the lime juice and sweeten to taste with sugar. Put to chill or serve cold.

Notes

Ginger: This recipe uses Jamaican ginger, which has a stronger, spicier flavour than most other varieties. If using a different type of ginger, the drink may taste less intense, so you may want to reduce the water slightly the next time you make it.
Sugar: While this recipe calls for brown sugar, you can use any sweetener you like to sweeten the drink to taste.
Carbonated water: This recipe uses 10 cups of water total. For a fizzy version, replace 5 cups of the still water with carbonated water. If serving the entire batch right away — like at a party — stir in the carbonated water just before serving. Otherwise, add the carbonated water to individual glasses as needed to keep the drink fresh and bubbly.
