Even when I am cooking none Jamaican food I almost always put a Jamaican twist on it. I love my greens so I tried cooking tuscan cabbage flavoured the Jamaican way. Here is the recipe for you to try.

Ingredients
400gTuscan cabbageChopped
1Small onionThinly sliced
1Small bell pepper The colour is up to you
1Medium tomato Chopped
1Medium carrotSliced into thin strips
¼Scotch bonnet pepper Finely chopped
2Cloves garlic Crushed
2Sprig of thyme
3tbspCoconut oil
SaltTo taste
¼Black pepper
Instructions
Heat 3 teaspoons of coconut oil in a Sauté Pan over low heat, add the garlic, onion, scotch bonnet and thyme and cook until onion is soft. Spinkle a pinch of salt, the help the onion solften quicker.
Add the bell pepper, tomato and cook for three minutes.
Add the cabbage and the carrot. Add black pepper and salt. Stir them cover the pot when the vegetables cook until tender.
Notes
Serve with boiled green banana, dumpling and potato like I did. Nothing more Jamaican than that!
